Protein Snickers Brownie

Layers and layers of goodness in this brownie recipe, high protein, low sugar and extra indulgent! Who wants some?

Brownie layer ingredients

• 40g of coconut sugar or erythritol • 60g spelt flour • 30g plain flour• 1 mashed banana• 1/2 cup of coconut yogurt • 1/2 cup of oat milk • 40g chocolate protein powder • 1 tbsp cacao powder • 1/2 tsp baking soda• 2 squares of Lindt chocolate

Caramel layer ingredients

• 6 dates • 2 tbsp of crunchy peanut butter • 1/3 cup of coconut cream (or the top - hard bit of a coconut milk can

Chocolate layer ingredients

• 1/2 tablet of Lindt dark sea salt chocolate • 1 tbsp of coconut oil

How to make

1. Blend together all the caramel layer ingredients2. Mix together all the wet ingredients: mashed banana, yogurt, milk3. In a separate bowl mix the dry ingredients together: flour, coconut sugar, cocoa powder, protein powder4. Add dry ingredients to wet ingredients and mix everything5. Add the broken up dark chocolate6. Add to a rectangular or square baking tin with parchment paper7. Bake for 25-30 min until the knife comes out clean8. Let cool for 10 min9. Add the caramel layer on the top and leave it rest overnight in the fridge10. On the day, melt the chocolate and coconut oil on Bain Marie11. Cover the cold brownie with melted chocolate and leave it for few more hours in the fridge12. Cut and enjoy!
